The server crashed and when it restarted, my chest-plate was gone. It had just been on an anvil and was in my inventory.
VH owes me a fletcher and now diamond chest plate, this is getting ridiculous.

What kind of chestplate was it? You will not get back the villager but the chestplate can be considered.

Diamond chest plate with Thorns 3/Un-breaking 3/Mending/Protection 5.
I understand now what happened to my only villager, he was in a loaded chunk near my AFK fishing hole and the server crashed while I was AFK fishing, that's why I didn't catch it right away.
